Gemelli è un segno che rappresenta l’unione degli opposti, la dualità, l’azione dei contrari.  Il nome deriva dal Latino “gemini” e dal Greco “gamos” cioè unione.  E’ un segno che esprime il potere creativo dell’essere umano e i nati sotto questo segno, quando hanno un’idea, si danno subito da fare per metterla in opera.  Sanno valutare le situazioni in modo acuto mentre colgono le sfumature più sottili, e questo rende i Gemelli molto adattabili alle situazioni.  Nei rapporti interpersonali hanno una fonte inesauribile di inventiva, possono a volte sembrare superficiali, ma hanno invece un gran bisogno degli altri dai quali cercano conferma.

Ingredienti:

500 ml  di yogurt alla vaniglia
2 cucchiai di zucchero di canna
10 gr di colla di pesce
1 cucchiaino di estratto di vaniglia
Fragole a piacere e zucchero

In una ciotola  mettiamo la colla di pesce a bagno in acqua fredda. Polverizziamo lo zucchero con l’aiuto di un frullatore per renderlo più fino e lo aggiungiamo allo yogurt. Prendiamo la colla di pesce, la strizziamo bene e la facciamo sciogliere in un pentolino con un cucchiaio di acqua calda per pochi secondi. La mettiamo poi nello yogurt, amalgamiamo bene il composto, e lo versiamo  in stampi individuali. Lo raffreddiamo in frigo per tutta la notte.  Laviamo le fragole, metà le lasciamo intere e l’altra metà le tagliamo in piccoli pezzi che mettiamo in un pentolino insieme ad un cucchiaio di zucchero.  Le facciamo cuocere a fiamma bassa fino a quando non iniziano a sfaldarsi e ad assumere un colore leggermente più scuro.  Lasciamo raffreddare il composto della copertura, e prima di gustare la finta panna cotta, la togliamo dagli stampi, aggiungiamo la copertura e decoriamo con tante dolci fragole, come nella foto!  Per chi fosse intollerante al latte, può utilizzare lo yogurt di soia alla vaniglia, e chi non usa la colla di pesce per motivi etici, può utilizzare l’agar agar.

People born under this star sign tend to eat quickly without giving much importance to food and how it’s cooked or the quantity.  We want to dedicate this little delicacy to them, the creamless panna cotta (Italian cooked cream that is sweetened, thickened with gelatin and molded), made with yogurt and strawberries… two ingredients that are quite different from each other but when combined, create harmony for the palate and complement each other… just like the two sides of the Gemini.  🙂

Ingredients

500 ml  of vanilla yogurt

2 tbsps of cane sugar

10 gr of isinglass or fish glue

1 tsp of vanilla extract

Strawberries and sugar (as much as you like)

We put the isinglass or fish glue in a bowl with cold water while we pulverize the sugar in a blender.  We add it to the yogurt in a separate bowl, then we squeeze the isinglass well and put it in a small pan with a tablespoon of warm water for a few seconds then we add it to the yogurt. We mix everything well then put this mixture in individual moulds which will be left in the fridge overnight.  We wash the strawberries and leave a few for decoration. The remaining strawberries are chopped and cooked briefly on a low flame with a tablespoon of sugar.  When they become a bit dark and creamy, we place them to cool in a bowl.  Before we enjoy our creamless panna cotta, we take it out of the moulds, pour the strawberries over them and decorate with the whole strawberries, just like our photo!  For those who are lactose intollerant, vanilla soy yogurt can replace the regular yogurt, and for those who prefer to avoid the isinglass for moral reasons, agar agar can be used instead.
